
Craving something warm, comforting and packed with goodness? This Curried Cauliflower and Cashew Nut Soup is an absolute winner — rich, creamy, and full of flavour, with a gentle kick of spice to warm you up from the inside out.
Not only is it delicious, it’s loaded with nutrients too. Cauliflower is a low-calorie powerhouse full of fibre, vitamins C and K, while cashews add a creamy texture and a boost of healthy fats and plant-based protein. It’s dairy-free, gluten-free, and perfect for meal prep or a cosy weeknight dinner.

Ingredients
3 tablespoons extra virgin olive oil
2 leeks, sliced (the white part only)
2-3 cloves of garlic, sliced
2 stalks celery, sliced
1/2 large cauliflower, roughly chopped
1 cup raw cashews, soaked for 2 hours or overnight
Salt and freshly ground pepper
1 tablespoon turmeric powder
1 tablespoon curry powder
1/4 teaspoon of cayenne (optional)
1-2 litres vegetable or chicken stock
Optional to serve
4-6 tablespoons of dry roasted cashews, roughly chopped
4 tablespoons fried sliced shallots
4 tablespoons coriander leaves, coarsely chopped
Instructions
1. Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the leeks and garlic. Add salt and pepper to taste and sauté for about 5 minutes, until the vegetables are soft and fragrant. Stir in the turmeric, curry powder and optional cayenne, and cook for 1 minute, allowing it to become fragrant.
2.Cook the Vegetables: Add the cauliflower florets and cashews to the pot. Stir everything together to combine. Cook for another 5 minutes.
3. Add the Broth: Pour in the broth, making sure the vegetables are covered. Bring to a simmer and cook for 15-20 minutes, until the cauliflower and cashews are soft and tender.
4. Blend. Blend the soup until smooth and creamy, using either a stick mixer or blender. Taste to adjust seasonings.
5. Serve. Serve soup hot as it is or, with a scattering of toasted cashews, shallots and coriander. You can even on drop in a dollop of Greek or coconut yogurt for a hot/cold tasty twist.
